If you are not from Ohio you may not be familiar with the concept of a Buckeye candy. It's a peanut butter center coated in chocolate! Yum! So I thought they would go perfectly on top of peanut butter cupcakes with chocolate frosting.


All boxed up and ready to go!
Buckeye Candy Recipe:
1 (16 oz.) pkg. powdered sugar, sifted
1 1/2 c. creamy peanut butter
1/2 c. butter, softened
1 tsp. vanilla
1/2 tsp. salt
2 oz. parafin wax
(12 oz.) pkg. semi-sweet chocolate chips
Blend sugar, peanut butter, butter, salt and vanilla until smooth. Shape into 1 inch balls. Melt chocolate chips and paraffin in top of double boiler. Dip balls in chocolate mixture with toothpick until 3/4 covered. Place on waxed paper until set. Cover over hole until smooth. Makes 6 dozen.
I just have to congratulate you on these amazing peanut butter buckeye cupcakes Jenn! You actually made the Buckeye candy to go on top?! These look so professional! My friend is from Ohio, I will send this to her! I have never heard of Buckeye candy before - I thought it was something to do with Buck from IceAge :o) Gorgeous! I am certain whoever ended up eating these was over the moon :D

ReplyDeleteThey do something similar at our boys' elementary school, but we've never participated. However, they don't allow ANY nuts, so sadly these wouldn't be allowed! I love peanut butter balls, so I bet these would be similar. Yours look so beautiful!
