Muffin Tin Monday - Bhajis for Breakfast

So, yes it is Tuesday but since it was a busy holiday yesterday we are going to pretend :) Bhajis are sort of like a vegetable fritter with Indian spices and Kidlet loves to eat them anytime of day but we usually have them at breakfast! Want more MuffinTin fun? Check out Muffin Tin Monday

Bhajis are so delicious and versatile. Below I give you my standard recipe but you can put whatever you like in it or leave some things out! Any veggie you can shred up that you have on hand can go in!

Bhajis Recipe

1 zucchini
1 carrot
1 sweet potato
1 red onion
1 green pepper *not bell, but any kind of spicy pepper you like, or leave it out!*
1 cup chickpea flour *any kind of flour you have on hand is fine but we prefer the chickpea*
1/2 cup cold water
1 tsp cumin
2 tsp turmeric
1 tsp salt
oil for frying

Directions

Shred the first 3 veggies. Finely chop the onion and pepper and place in bowl with shredded veg. Add the remaining ingredients and stir to combine.

Drop by spoonful in to hot oil and fry on both sides until golden brown

  2. I was thinking of making something similar with our zucchini.
    Also I saw some really cute ceramic muffin tins at the craft store that would be awesome for muffin tin meals.
    Oh, FYI, my browser often crashes lately when coming to your blog while trying to load some swagbuck add. Don't know if the sidebar is a bit too ad-heavy for some computers.

  3. Okay, my mouth is watering just reading the recipe and looking at the picture! I want this muffin tin! With the Indian food, doesn't it kind of seem like a thali? :0)
