Happy Pizza Pockets

It's that time of the week where I really need to go to the grocery store but just haven't made it yet! So things can get a little weird in the meal department :P

Igloo Penguins!

It's still been pretty snowy around here and we are definitely ready for it to be gone! I wish I could take credit for this adorable idea but I snatched it from the brilliant creator of Tiny Princess LunchBox. Check hers out because it is about a million times cuter than mine :D

Main Compartment: Peanut butter sandwich igloo made with FunBites Cube-It. the door is natural fruit leather. The penguins are cupcake rings and each one has a Trader Joe's penguin tummy gummy in it.

Meatless Monday: Week 1

Today is the first Meatless Monday on BentoForKidlet. Of course, every Monday here is Meatless ;) as is every other day! But starting this week I will be hosting a weekly link up for your meat free posts!

Don't worry this isn't Kidlet's! I made breakfast bento for us the other day. Kidlet says we need to get a manlier waffle maker ;) In the box there are three Hello Kitty waffles, banana, grapes, and yogurt.

National Peanut Butter Day

It's National Peanut Butter Day! An excellent day indeed! Kidlet and I are both big fans of peanut butter! Also check out my buddy Cristi who has made over 101 Peanut Butter Sandwiches!

Main Compartment: Mini peanut butter and jelly filled rolls. I put some extra roll dough in a mini muffin pan to get these cutesy cupcake looking rolls!

Last Minute Lunch and a Snack

So, with the wind chill it's -10 degrees here. They keep saying how it's DANGEROUSLY cold. So why on earth did my kid still have school today?! I saw lots of kiddos walking to school with no hats on! It's madness. So, this lunch was a last minute panic to get something packed. Kidlet is happy with it!

Kidlet has Trader Joe's Spagetti O's in a thermos. On the side he has a Chobani Campions yogurt, carrots, strawberries, and a tiny piece of cake.

And a bonus snack! This was for me to take when I had a sleep study done. I have to have a snack at night to take my pills with so I thought it would be fun to make a little bento! There are little peanut butter sandwiches, grapes, and a milk box. Yum!

Winnie the Pooh Bento

Today is A.A Milne's birthday! We're celebrating with Winnie the Pooh and friends and you can too! Link up any Milne lunches you've created below :)

Kidlet has a Boca Chik'n patty sandwich with cheese Pooh and friends drawn on with food coloring. On the side there are grapes, checkered apple, peppers, and dressing. Everything is packed nicely in our Lunchbots Uno.

I thought this would be another perfect opportunity to use one of our blank Lunchbox Love. I think I really found the perfect quote for my Kidlet!

Star Trek Enterprise Lunch

My super amazing buddy Cristi from BentOnBetterLunches sent me these amazing cookie cutters from our favorite nerd site ThinkGeek! I have been drooling over them since their release and Kidlet and I couldn't wait to start using them! Since I have been making bento so long it was the first thing I thought about when I saw them!

Puppy Dog Bento Lunch

I love finding new ways to use my CuteZCute cutter set. I wanted to make a puppy to go with a chocolate pawprint that we had leftover from making cupcakes for a buddy of ours. I think it turned out nicely!

Main Compartment: Puppy peanut butter sandwich, Alphabet cookies, and a chocolate pawprint
Small Compartment: Carrots, Cucumber, and Dip
Larger Compartment: Chobani Champions Very Berry yogurt in a Little Dipper and a checkered apple

Homemade Cheese Crackers

 So, Kidlet is a huge fan of Cheez-Its. It's always been his #1 requested treat food but I hate that they are so full of ingredients I cannot pronounce. In comes the cheese cracker recipe. I think to myself "Self, homemade cheese crackers will solve the problem! But oh...they must be so hard and time consuming." But oh no, I was so wrong. These crackers are a cinch to pull together and oh so delicious!

I used my trusty FunBites Cube-It cutter to make easy work of the crackers. You can just cut them out with a knife or other cutesy cutter shapes also.

Cheese Crackers

  • 8 oz extra-sharp cheddar cheese, shredded
  • ½ stick unsalted butter, at room temperature
  • 1 t kosher salt
  • 1 c flour
  • 2 T ice water
 Directions: Pre-heat oven to 375
  1. In a stand mixer fitted with a paddle attachment, combine cheese, butter, and salt. Add the flour and mix until pebble like in consistency. 
  2. Slowly add in the ice water and mix until a dough forms.
  3. Flatten dough in to a disk and wrap in cling wrap. Refrigerate for 1 hour.
  4. Roll dough out as thinly as possible. Use a Cube-It cutter to create your square crackers
  5. Place on a parchment lined cookie sheet and bake for 5-10 minutes until golden brown

Store your crackers in an air tight container and enjoy the deliciousness you created! Kids will love them in their lunches!

I love the little Lunchbox Love Note! I did not know most Polar Bears were left handed but I love it! Kidlet is a lefty too :) He will be glad to know he is in good company!

Tasty Lunch and a Country Bob's Giveaway!

Today was a quick lunch kind of day! Kidlet chose all of the things to go in to his box and I tossed it together :) Teamwork!

Main Compartment: 3 Morningstar Farms Chik'n Tenders, salad, dressing

Small Side Compartment: Blackberries and cherries

Large Side Compartment: Country Bob's All-Purpose Sauce mixed with sour cream in a Little Dipper

Kidlet and I were given some Country Bob's to review and we love it! It has a tiny bite to it which I love but Kidlet needs to have a little sour cream mixed in so it isn't too spicy for him. I find it to be very similar in taste to an HP sauce. It's soooo delicious. We dipped everything we could find in it and our 2 bottles are almost gone!

The only thing I don't care for is that it has HFCS in it. However, in small amounts no big deal :) So it's not a deal breaker. I just have to stop myself from smothering things in it ;)

Soft Kitty Bento

Kidlet got a lot of fantastically nerdy things for Christmas this year. Among them a Soft Kitty shirt from ThinkGeek. So of course on this, the first day back to school, I made him a lunch to match his tee!

Kidlet has a Boca Chik'n patty sandwich with soft kitty cheese drawn with food colors. On the side are bell peppers, cherries, checkered apple, and blackberries.

Happy Birthday Sherlock Holmes!

Kidlet and I are big fans of Sherlock Holmes! The stories, the movies, and the BBC show as well! Today is Sherlock Holmes' birthday! And who doesn't like celebrating birthdays? English Muffin Bread

This recipe has been on my "To-Make" list for what seems like ages! Now that I have made it and discovered how easy and delicious it is I cannot believe I didn't make it sooner!

This bread is ridiculously easy! It's a wet dough so there's no kneading and you only have it rise once in the pan!

Instead of making the 4 loafs that this recipe creates I opted for 1 loaf and 2 dozen muffins! English Muffin Bread Muffins. Hah! They are perfect for bento lunches.

English Muffin Bread: Adapted from One Good Thing by Jillee


5 1/2 cups of warm water
4 1/2 TBSP RAPID RISE yeast (this is important)
2 TBSP salt
3 TBSP sugar
11 cups all-purpose flour
1/2 stick melted butter (for top)

1.) Pre-heat oven to 350

2.)  Mix water, yeast, salt, sugar, and flour until combined. The dough is going to be really sticky. You can do this in a mixer but add the flour carefully or you will be wearing most of the ingredients because they barely fit in a regular KitchenAid bowl.

3.) Divide dough among 4 bread loaf pans or as I did among 1 loaf pan and 2 - 12 count muffin pans that have been sprayed with cooking spray

4.) Let rise in pan for approximately 20-30 minutes or until the dough is at the top of the pans

5.) Bake at 350 for 15-20 minutes for the muffins and 30-40 minutes for the loaf

6.) Let rest 10 minutes and then brush with melted butter

7.) Let it cool if you can and then slice and enjoy!
