Baked Pancake Bites

Ever since I made the Heart Shaped Baked Pancakes, Kidlet has been begging me to make them again! I was happy to oblige because they are so very easy to make. I added a little nutmeg to the batter this time and they tasted just like donut bites! Yum!

Baked Pancakes
  • Ingredients

    • 1 egg
    • 1 cup buttermilk
    • 2 tablespoons melted butter
    • 1 cup All-Purpose Flour
    • 1 TBSP sugar
    • 1/2 tsp baking powder
    • 1/2 tsp soda
    • 1/2 tsp salt
    • 1/2 tsp vanilla
    • 1/2 tsp nutmeg
  • Instructions 

    1.  Pre-heat oven to 350 degrees.
    2. Whisk together all ingredients until well blended. May be a little lumpy.
    3. Pour batter in to greased muffin tins, standard size or mini.
    4. Bake for 10-15 minutes for standard sized muffins and 6-8 minutes for minis.
    5. Cool slightly before removing from tins. Serve warm plain or with butter and syrup or jam.

Shamrock Fun!

St.Patrick's Day is not too far away now! Time to put on our thinking caps and make some cute green foods!

I added a little green food dye to my favorite bread recipe and used my FunBites Cube-It to make some cutesy sandwich stacks!

Red Dwarf: Mr.Flibble Lunch

We've been working our way through all of the seasons of Red Dwarf and just stumbled upon a very hilarious episode involving a penguin puppet called Mr.Flibble! We still can't stop laughing about it!

Main Compartment: Two peanut butter and jelly penguins and a magic carpet made of natural fruit leather.

Heart Shaped Baked Pancakes

It's Shrove Tuesday which of course means we must eat pancakes! I got the brilliant idea of baking them in a silicon muffin pan from my buddy Debby at iPackLunch. You can check out her delicious recipe there! I used a mix for mine since it is what I had on hand and it worked out deliciously as well!

Valentine Salad

Kid Made Lunch

Today's lunch was packed by Kidlet! While bento is generally a labor of love from me to the Kidlet, I like to let him in on the fun sometimes too! I let him loose in my bento stash and it was very interesting to see what he picked and how he put together his meal!

Kidlet chose his Lunchbots Uno and packed a Boca Chik'n patty sandwich in the shape of a train, grapes, carrots, peppers, tomatoes, dip, and some pretzels. He even chose his own napkin in this cute robot print!

I had a lot of fun watching him decide what to put in his lunch and I think he did a fantastic job!

Pull-Apart Heart Rolls

So, my first reaction to the FunBites Luv It was "what the heck am I ever going to use THAT for?!" I have absolutely not patience for arranging my food in tiny tangrams and I don't think it would thrill my 12 year old the way it might some pre-schoolers! After mulling it over for quite some time I struck an amazing idea! Pull apart rolls!

Yeah, that just happened! The FunBites is perfect for making cutesy rolls. They cut out nicely and the plunger part plops them on to the baking sheet in the right shape!

Now, I just used my favorite roll recipe which I will detail for you below but I imagine you could use refrigerated dough or your own favorite roll recipe! Or biscuits....or many delicious possabilities!

Pull-Apart Rolls

1/2 cup milk (I use skim)
1/4 cup sugar
2 teaspoons salt
3 tablespoons butter
3 packages (or 6 3/4 tsps.) of dry active yeast
1 1/2 cups warm water
5 – 6 cups all-purpose flour
  1.   In a small saucepan, stir milk, sugar, salt and butter together. Heat over low heat until butter melts and sugar dissolves. Cool until lukewarm.
  2. Dissolve yeast in warm water in warmed mixer bowl. Add lukewarm milk mixture and 4 1/2 cups flour to yeast mixture, and using a dough hook if you have one. Add the rest of the flour by 1/2 cup until your dough forms a ball. Knead with the hook until it pulls away from the sides. I don't have a dough hook so I use the paddle and just fop it around on high speed until it looks like dough 
  3.  Place dough in a greased bowl, turning it to grease the top. Cover the dough with a clean, dry dish towel, and let it rise in a warm place for 20 minutes (may be longer if it's cold where you are!) 
  4. Roll the dough out to about 1/2 inch thickness and cut in to shapes. Place shapes on a parchment lined baking sheet, cover with a cloth and let rise for 20 minutes. 
  5. Pre-heat oven to 425. Bake for 7-10 minutes until golden brown. Brush the tops with melted butter!
