Meatless Monday: Week 13

It's that time again! Meatless Monday! Link up your completely meat free posts at the end and share in the veggie love!

Packed in our EasyLunchboxes, Kidlet has a deconstructed layer dip of beans, Chobani 0% Plain Greek Yogurt, guacamole, and cheese. Beside the dip there are corn tortilla chips. The large side compartment has strawberries and blackberries. The small side compartment has some lettuce to go with the dip.

Puzzle Baked Pancakes

I wanted to get one more puzzle lunch in before the end of April and I succeeded! I got this adorable Silicon Puzzle Mold that I found via Melissa at Another Lunch. Kidlet loves baked pancakes so I was thrilled to find this pan! It will definitely get a lot of love from us.

Pillsbury Artisan Pizza Crust Giveaway!

Kidlet, like most 12 year old boys, could eat nothing but pizza and be happy. I was really excited when I found out about Pillsbury's new Artisan Crust Pizza dough with whole grains! I generally prefer to make my own dough but this is perfect for those rushed Oops-I-Forgot-I-Need-To-Feed-You-Again nights.

The verdict was all thumbs up! Everyone loved the nutty flavor of the crust. It was crisp and just a little chewy. So delicious. We topped ours with mozzarella, parmesean, pineapple, and ham on one side for the carnivores. This is likely to become a staple in my fridge for busy nights!

Indian Samosa Wrap

I would like to tell you that I made an incredible new recipe. Sadly this is not the case. Instead I am showing you what Kidlet will have tomorrow. It is also known as a Mommy-Doesn't-Feel-Good-Lunch. The good thing is it involves some of Kidlet's favorite foods so he doesn't mind that it isn't fancy. I don't like feeding him too many prepared foods but sometimes it's the only option so I try to at least make them good ones.

Happy Rex Manning Day!

My all time favorite movie is definitely Empire Records. If you have never seen this movie you must see it immediately! It's amazing. Luckily for me some of my Edible Geekery buddies are also big old nerdy fans of the movie! Yay! So we're having a little blog hop to celebrate the fact that today is Rex Manning Day!

Kidlet loves this movie right along with me so I know he will love this surprise lunch for tomorrow! Since we are doing some rearranging of furniture it will be nice to not have to worry about fixing lunch. And then he can enjoy the fun without worrying about it possibly being inappropriate for school.

World Autism Awareness Day 2013

Today is World Autism Awareness Day! This is a cause very close to my Kidlet's heart and he was very excited for me to make a special lunch for him today. For the past two summers Kidlet has spent a large part of his summer going to summer school. By choice. Not because he needs summer school but to participate in a Peer-Buddy program. He worked in a classroom of special needs kids helping with their summer school work and most of all being a wonderful friend.

Now that Kidlet has started Middle School he was given the opportunity to give up his Study Center class period to help in the special needs room. He has made some great friendships there and is amazing at working with kids who have Autism and other special needs. His sweet nature, patience, and understanding of the differences we all have make him a rather extraordinary person in my book. The teacher he works with told me he is just a natural and they love having him!

Kidlet got these special bears at Build-A-Bear Workshop. A $1 donation to Autism Speaks is made for every bear purchased! He made the one on the left for himself and it is unbelievably soft! The bear on the right in the cutie shirt he made for the teacher he works with in the special ed room.

Meatless Monday: Week 9

It's Monday again! We're recovering from a fun and action packed Spring Break! I wish I could have another week like this because I enjoyed having my boy around!

This lunch is a little bit sad to look at because it is the last lunch ever to be packed in our beloved tiffin! Kidlet has had this tiffin since 1st grade and after this final use it broke in a way that could not be repaired. No idea what happened to it. Maybe it was just ready to be done :)

Kidlet has a Quorn turk'y burger with cheese decoration, salad with dressing, strawberries, and pretzels.
