House Stark Sigil

Today is the start of a brand new season of Game of Thrones! *squee* Of course, I don't let Kidlet watch GoT so this lunch is just for me! I'm participating in a blog hop with my Edible Geekery buddies so be sure to click the button at the end of the post to see more geeky love!


In my brand new Lunchbots Trio I have a peanut butter sandwich on oatmeal bread with a Direwolf made of cheese and food coloring. On the side there is a salad, pineapple, checkered apple, and grapes.

Since Easter is almost upon us what could be better than a Panda in disguise! Because everyone wants to wear bunny ears in the spring!

Meatless Monday: Week 8


It's another fantastic Meatless Monday! I hope spring is being more spring-y wherever you are because it's snowing where I am right now. *sigh* I need some sunshine!


Kidlet is on Spring Break this week so I thought I would surprise him with a fun Muffin Tin breakfast!

Guest Post: BentOnBetterLunches!

I am very excited to have a fantastic guest post today from my buddy Cristi of BentOnBetterLunches! Super Easy Mushroom Pie

Today's lunch features one of Kidlet's absolute favorite comfort foods: Mushroom Pie! I can't remember now how I first stumbled upon this recipe but it is simple and delicious! Despite being Spring now it's still quite cold where we are so this was a welcome warm supper turned lunch!

Super Easy Mushroom Pie

Ingredients

Filling

* 2 1/2 cups chopped onions
* 3 tablespoons butter
* 8 cups chopped mushrooms
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* lots fresh ground black pepper
* 8 ounces cream cheese

Crust

* 2 1/2 cups flour
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 1 cup butter
* 1 cup sour cream
* flour, for coating the dough and board for rolling

Glaze

* 1 egg
* 1 tablespoon milk

Directions

1. Saute the onions in butter in a large skillet.
2. When the onions are soft and translucent, add the mushrooms and thyme and suate for a few more minutes, until the mushrooms release their juices.
3. Add the seasonings.
4. Cut the cream cheese into small pieces and stir it into the mushrooms until it melts.
5. Remove from the heat and set aside until crust is ready.
6. Preheat oven to 400°F.
7. For the crust, combine the flour, baking powder and salt in a large bowl.
8. Cut in the butter just enough to achieve a crumbly mix.
9. Stir in the sour cream to form a soft dough.
10. Generously dust the dough with flour and form into a ball.
11. On a heavily floured surface, roll out 2/3 of the dough to fit a 10 inch pie plate.
12. Trim the edges.
13. Fill with the mushroom mixture.
14. Roll out the remaining dough about 1/4 inch thick (Thicker than normal pie crust) and cut into strips 1 inch wide.
15. Weave the strips into a lattice over the filling.
16. Fold the ends of the lattice strips under the bottom crust, pinch the edges together, and flute.
17. For the glaze, beat the egg and milk.
18. With a pastry brush, thoroughly coat the pie crust. (You will have more glaze than you will need).
19. Bake the pie for 25-35 minutes, until the crust is puffy and golden.

Guest Post from Loving Lunches!

I'm loving being able to guest post for Jenn today! I've been all about the bunny over at my little blog, Loving Lunches this week (with more to come) and when considering what to make for Bento for Kidlet I just had to include a panda somehow, along with a geek reference. . . So, I channelled my inner Professor Elemental & I bring you. . . the Panda-Bunny!






Admittedly not quite as 'Magical' as an Al-toise or Chimpan-goose, but none the less I'm happy :-) 

I made the cheese & ham bunny sandwich on white bread & cut using a gingerbread man pancake mould. The black ears are courtesy of some Vegemite, with the pink detail being made of ham, cut with a CuteZCute. The eyes are made from a halved prune with cheese also cute with the CuteZCute. The mouth & nose are made from the gingerbread man arms, carrot sticks & a sultana/raisin. 

Joining my creation today are some carrots with panda picks (available from Bento USA and in Australia through Omai) and I had to try my hand at a checkered apple. . . I think I need more practice :-)

Today's lunch is what Kidlet calls "nibbles" and it's one of his favorite kinds of lunches! And easy for me since it's just a mix of things from the fridge and leftovers from dinner!

Meatless Monday: Week 7

This lunch actually ended up being mine when Kidlet was invited to go on a field trip with the special needs class. He spends his study center helping in the special ed room and it has been a wonderful thing for him. He just adores working with the kids!

Healthy Lunch Challenge

Today Kidlet and I are participating in a Healthy Lunch Challenge put on by the awesome creators of Crunch A Color and EasyLunchboxes.  We are all about healthy eating around here so we were very excited to be included! We got a set of Crunch A Color cards to play around with and they are a lot of fun. You earn points for the healthy foods you eat with an emphasis on a variety of colors. Kidlet enjoyed trying to beat me with points and most of the time he was successful!


Kidlet's lunch is packed up in one of our Easylunchboxes!

Main Compartment: Homemade egg salad on a whole grain challah roll with havarti cheese stars
Large Side Compartment: Strawberries, blackberries, and a checkered apple
Small Side Compartment: Multi colored carrots and a container of dip

Crunch a Color also makes adorable Conversation Starter cards which are a lot of fun at the dinner table. After we're done talking about our days we bust out the cards for some silly and some very though provoking discussions!

Busy Day Egg Salad

Ingredients:
1 hard boiled egg
1/4 c. plain Greek yogurt
salt and pepper to taste

Directions:
1.) Peel and mash the egg
2.) Add Greek yogurt and season to taste
3) Put on a roll or serve with crackers! yum!

Pi Day 2013

It's our favorite math holiday today! Pi day!
